White peach watermelon salsa


 
Jen's White Peach, Watermelon Salsa
~Ingredients
1 large red bell pepper ~ diced
1 large yellow bell pepper ~ diced
¼ medium seedless watermelon ~ chopped in tiny pieces
3 white peaches ~ peeled and chopped
½ large Walla Walla onion ~ diced
1 bunch fresh cilantro ~ chopped
4 fresh Roma tomatoes ~ chopped
1 can black beans ~ drained and rinsed well
4 ears fresh sweet corn ~ take corn off cob (this does not need to be cooked),if in a pinch for time you can use a bag of frozen, thawed whole kernel corn.
1- 1 ½ tablespoons minced garlic
1 jar of your favorite salsa ( mild or hot, depending on your taste)
Pepper to taste
Salt to taste
Italian seasoning to taste
McCormick’s sea salt/garlic grinders to taste
Thyme to taste
1 teaspoon Old Bay seasoning
1-2 teaspoons basil
28 oz can stewed tomatoes ~ chopped
~Directions
This is a very simple recipe to assemble. The longest part is all of the chopping and dicing you need to do. Chop and dice all vegetables and fruit, place in refrigerator to keep cool. Add all spices, beans, jar of salsa, and stewed tomatoes. This will need to be placed into a very large bowl to mix as this makes a very large amount. I mix mine in two bowls. Toss all ingredients well and place in refrigerator until ready to use. This should last a few days in the refrigerator. However, this is best if eaten the first or second day. Great for a crowd!

Ever Wonder?

Do you ever wonder what it is that makes snowmen so magical?
Perhaps it takes us back to our youth and the fun we all had making snowmen in our yards. Could it be that in some way they remind us of a dear friend? Whatever it is I feel a spark of excitement when I build a snowman. When I was a child my twin brother and I use to see who could make the tallest snowman without it falling over. We even went as far as to drag a ladder from the garage and make our snowmen taller. It did not matter how cold or how snowy it was outside, we would spend hours making that perfect snowman.
Today there are contest for making the most unique looking snow person. Movies about them and books about them. Here in the South west we do not get snow. We improvise by making snowmen out of tumble weed. You go to the outer desert, find three nice round balls of tumble weed, place a tall spike in the ground, place the three balls through the middle of the spike on top of each other, spray them with white snow in a can and add white twinkle lights, eyes, a scarf, nose, twigs for arms and a scarf. Wa la ! You have an Arizona snowman!
If you are not into that you can always go to your nearest store and find all kinds of snowmen to place in your yard. Large ones out of large plastic bags that you fill with newspapers, hard plastic ones that have a light you plug into an electric outlet, there are ones that light up and have an air pump in them that blow up.
My favorite Christmas cartoon is "Frosty The Snowman". I love the picture book"The Snowman" Both of these are worthy of watching or reading with a fresh bowl of popcorn and enjoying with your family.
No matter how you look at it, one thing is for sure, snowmen are MAGICAL. They help to build wonderful memories.

Home goodness



Today I decided to try to come up with my own homemade buttermilk biscuits(Had to use the buttermilk before the due date) I think they turned out pretty good and my hubby thought they were yummie. (always a good sign) :)


Here is the recipe if you would like to give it a try. Let me know what you think after you have made them.



Buttermilk biscuits with rosemary,sage and cheddar cheese


2 cups flour,1 tablespoon baking power,1 teaspoon salt, 1/4 teaspoon baking soda, 2 teaspoons finely chopped fresh rosemary, 1 teaspoon finely chopped fresh sage. Mix all these dry ingredients together well.
Add 1/2 cup shredded cheddar cheese, 6 tablespoons really cold butter sliced up. Blend all the ingredients together with a pastry blender until like coarse meal.
Gently blend in 3/4 cup of buttermilk. Be sure not to over mix and handle dough gently.
Place on a floured surface and just pat the dough to about 1/2 inch thick. Cut with biscuit cutter and place in 450 degree oven for 10-12 minutes until light golden brown. Make sure not to over bake. Cool them slightly and enjoy with fresh creamy butter.
